Curried Cauliflower Dip

Roasted cauliflower pureed with yogurt, curry and other spices for a flavorful and healthy dip recipe.

Ingredients

  • 1 medium cabbage, chopped into florets
  • 3 cloves garlic, minced and divided in half
  • 2 tbsp extra virgin olive oil
  • 2 cups low fat plain yogurt
  • ½ tsp salt
  • 1 ½ tsp curry powder
  • ½ tsp garam masala
  • juice from 1/4 of a lemon
  • 2 tbsp feta cheese
  • pita chips and/or raw veggies for serving

Instructions

  1. Preheat oven to 400. In a roasting pan, toss the cauliflower with 2 tablespoons olive oil, half of the minced garlic and a pinch of salt.
  2. Place the cauliflower in the oven and roast for approximately 20 minutes, until the cauliflower begins to brown and soften. Remove from oven when done and set aside to cool for a few minutes.
  3. Transfer the roasted cauliflower along with remaining minced garlic to a food process. Add the yogurt, and puree to combine to an even consistency.
  4. Add the salt, curry powder, garam masala, lemon juice and feta cheese to the food processor. Puree to thoroughly incorporate all the ingredients into the dip.
  5. Transfer the dip to a serving bowl, and serve with pita chips and/or raw vegetables. You can refrigerate the dip to serve later if you like.
