Begin boiling water for pasta and cook according to package directions.
As the pasta cooks, get the cheese, milk and veggies ready to add in right away.
Add the raw spinach to a colander. Pour the pasta and cooking water into the colander with the spinach. The boiling water will wilt the spinach. Gently toss the pasta in the colander to drain it of all the water.
Add the macaroni and spinach back into the pasta cooking pot, and toss immediately with the olive oil and cheddar cheese.
Gradually stir the milk into the macaroni. The cheddar cheese will be melting as you do this.
Stir in the peas and 1/4 cup of the Parmigiano cheese. Add salt and pepper to taste. Serve with the extra parm cheese for topping.
