Being involved with this Leftover Tuesdays thing has really got me making good use of my leftovers here! Just last night, I had a good bit of leftover spinach salad, with balsamic vinaigrette, pecorino romano and toasted almonds. So I sauteed some garlic, added the leftover salad, and voila! A tasty sauce to toss with tortellini.
