HOW TO MAKE LIDIA'S SWISS CHARD POTATOES: STEP BY STEP

STEP 1: Prepare the swiss chard. Remove the thick stems from the chard and thinly slice the stems. Set aside. Coarsely chop the chard leaves, and set aside in a separate pile.

STEP 2: Boil the potatoes. Chop the potatoes and then add them to the pot of boiling water.

STEP 3: Add the chard. After 20 minutes, add the sliced chard stems to the boiling water. Cook the stems for 10 minutes, and then add the chard leaves.  Drain in a colander.

STEP 4: Start garlic in the skillet. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic, and cook until the garlic begins to brown.

STEP 5: Add the cooked chard and potatoes to the skillet. Stir the mashed potatoes. Add 2 tablespoons of olive oil and season to taste with salt and pepper. Enjoy!
