Onions and garlic

Red kidney beans

Butternut squash

HOW TO MAKE KALE SOUP WITH POTATOES AND SAUSAGE: STEP BY STEP

STEP 1

Brown the sausages: Heat a large soup pan with oil spray. Add the sausages and cook for 5 minutes, stirring occasionally. Remove the sausages and set aside to cool.

STEP 2

Sauté onions & carrots: Heat the olive oil on medium heat in the soup pan, and then add the onions.  Sauté for 5 minutes, then add the carrots and sauté for a few more minutes.

STEP 3

Stir in potatoes and kale: Stir in the potatoes and cook for a minute or two.  Add in the chicken stock and water and bring to a boil.  Once the veggies are soft, stir in the kale.

STEP 4

Stir in the kale in batches, to allow the kale to cook down a bit to create more room. Add salt to taste and a pinch of red pepper flakes.

STEP 5

Add sausage and beans: Stir in the sausage and the kidney beans.  Cook for another 5-10 minutes to let all the flavors meld.
