Sautéed Radicchio with Balsamic and Parmesan Cheese

Radicchio sautéed with garlic in olive oil, finished with Balsamic and Parmesan cheese to balance the bitter flavor of this healthy vegetable.

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 head of radicchio, coarsely chopped
  • 2 or 3 cloves of garlic, minced
  • 1/4 cup white wine
  • 1 teaspoon Balsamic vinegar
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet on medium heat. Add the garlic, cook for about 30 seconds until the garlic starts to become fragrant.
  2. Add the radicchio to the skillet along with the remaining olive oil. Stir to combine with the garlic. Cook for about 2 minutes, then stir in the white wine.
  3. Cover the skillet and lower the heat to medium low. Cook for about 10 minutes, until the radicchio has softened.
  4. Finish the dish by uncovering the skillet and turning off the heat. Stir in the balsamic vinegar, and top with the Parmesan cheese. Add salt and pepper to taste, and serve the radicchio.

Notes

  • If the garlic cloves are on the smaller side, we recommend using 3. If they are larger, 2 should be enough.
  • I don’t recommend substituting garlic powder for the fresh minced garlic in this recipe.
