Using soynut butter in this tasty noodle side dish makes it a great nut-free option.

- 1 cup soynut butter
- 1 1/2 cups boiling water
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tbsp soy sauce
- 2 tbsp sugar
- 4 tbsp rice vinegar
- ½ yellow or red bell pepper
- ½ of a medium cucumber, peeled & diced
- 3 scallions, finely minced
- 12 ozs whole wheat linguine
- Place soynut butter in a medium bowl. Add boiling water, and mix with a spoon until consistently blended.
- Stir vinegar, salt, garlic, sugar and soy sauce into the soynut butter mixture. Set aside.
- Cook the linguine according to package instructions. When done, drain the noodles and toss with the soynut butter mixture.
- After adding the soynut butter, stir in the cucumbers, scallions and bell pepper. Serve immediately, or refrigerate to serve cold later.
