Soynut Butter Noodles

Using soynut butter in this tasty noodle side dish makes it a great nut-free option.

Ingredients

  • 1 cup soynut butter
  • 1 1/2 cups boiling water
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 2 tbsp sugar
  • 4 tbsp rice vinegar
  • ½ yellow or red bell pepper
  • ½ of a medium cucumber, peeled & diced
  • 3 scallions, finely minced
  • 12 ozs whole wheat linguine

Instructions

  1. Place soynut butter in a medium bowl. Add boiling water, and mix with a spoon until consistently blended.
  2. Stir vinegar, salt, garlic, sugar and soy sauce into the soynut butter mixture. Set aside.
  3. Cook the linguine according to package instructions. When done, drain the noodles and toss with the soynut butter mixture.
  4. After adding the soynut butter, stir in the cucumbers, scallions and bell pepper. Serve immediately, or refrigerate to serve cold later.
