1 tsp fresh parsley, chopped (other fresh herbs such as basil can be used)
1 tsp mustard
salt & pepper to taste
5 cups baby spinach
¼ cup yellow or red bell peppers, chopped into bite sized pieces.
12 grape tomatoes
1 tbsp feta cheese
3 tbsp pumpkin seeds, toasted
Make the vinaigrette: add the ingredients, garlic clove through the mustard, to a small bowl.
Whisk the vinaigrette ingredients together so they are well combined. Add salt and pepper to taste, and whisk again. Set the vinaigrette aside.
Place the spinach in a large salad bowl.
Add the peppers, tomatoes and feta cheese to the spinach.
Pour most of the vinaigrette into the salad, leaving about a tablespoon in the bowl. Toss the salad with the vinaigrette until the spinach leaves are well coated with the dressing, and the ingredients are evenly distributed.
Sprinkle the pumpkin seeds on top of the salad, and you are ready to serve and enjoy!
