2 single serving boxes of Tikka Masala Gravy from India in a Box
1 1/2 cups water
cooking oil spray
basmati rice for serving
Heat a pan on medium high with cooking oil spray. Add the chicken breasts, cook for 2 minutes on on side so that it starts to brown slightly. Turn over, cook for another 2 minutes, then remove chicken from pan. Set aside on a plate.
When the chicken has cooled a bit, cut it into half-inch thick slices.
Empty the contents of the Tikka Masala Gravy mixture into the pan along with the water. Bring the water to a boil, then reduce to simmer.
Stir the Masala Gravy frequently as it simmers for 3 to 4 minutes. Add the chicken slices into the gravy, and simmer for about 10 more minutes, stirring often, until the chicken is cooked through.
Serve the chicken tikka masala over rice, and with an Italian sparkling wine, if you are so inclined.
