This week’s produce

a variety of vegetables from a CSA share, including strawberries, kale and radishes.

Here are some of the items we got in the first CSA share pickup of the season, and ideas of what to do with them.

Green garlic

Chef Joe suggested making a pesto with green garlic, and that sounds like a great idea. He likes to make his green garlic pesto with pistachios instead of pine nuts.

You can basically use green garlic instead of regular garlic. The green stalks can be used as well as the bulb.

I just cut the outer layer of skin off the green garlic cloves and then use the rest like regular garlic.

Radishes

You can use the whole radish plant by making radish top pesto and roasting the radishes to add to the pasta. I used some of the green garlic I had on hand instead of regular garlic in the pesto.

I’ve also been using radishes by chopping them into small pieces and adding them to things like stir-fries and pasta sauces, in addition to adding them to salads.

Asparagus

There are so many things to make with asparagus! This quick asparagus goat cheese pasta is one tasty recipe to make with the seasonal vegetable.

I made roasted asparagus dip with this batch of fresh, local asparagus. I used one green garlic – both the cloves and stem – instead of the roasted garlic in this recipe. Worked very nicely!

Kale

I made a vegetarian sausage pasta, using the whole bunch of local kale in place of the handful of spinach the recipe calls for.

I also chopped up a radish into small pieces and used in the recipe.
