Sharing a beef recipe like today’s avocado steak tacos for #SundaySupper comes very naturally to me. One sure thing I could count on as a kid was that a visit to my Nana’s house on a Sunday meant that we’d be gathering around a large dining room table to enjoy a roast beef dinner. Whether it was a blizzard or 90 degrees outside, we’d smell that beef roasting upon coming in the house.
My Nana passed on to me the appreciation for gathering the extended family around a good home cooked meal featuring beef. While she liked to stick to that tried and true roast beef, I enjoy the versatility of beef for entertaining. Last week, I shared a recipe for a big pot of melt-in-your mouth red wine braised short ribs; this week, I’m serving up Awesome Avocado Steak Tacos.
I came up with this avocado sauce for steak tacos when we were hosting a birthday party this summer. The word “awesome” was thrown around a lot this summer to describe it, thus the name was born. As you might suspect, I made this on the grill for the summer gathering, today I’ve adapted it for indoor, holiday entertaining. I’m not sure if my Irish Nana ever ate an avocado, but it is nice and green and was part of bringing the family together, so I’m sure she’d approve of this recipe!
Setting up an array of tasty ingredients for a build your own taco, with steak at the center, is a festive way to entertain! The recipe details are in the card below; let me give a quick overview of the approach.
Get the avocado sauce started as your first step, but hold off on dicing the avocado until that steak is just about ready. If you’ve seen what happens to guacamole after being out for awhile, you’ll know why!
Next get the onions and peppers cooking up. As they sauté, put the steak rub together and let that flavor start to work on the beef.
Speaking of beef, I used flat iron chuck steak for this. You could easily substitute other lean cuts such as a sirloin. Using steak for tacos is a nice way to give a crowd some tasty beef without having to buy a large amount.
The steak gets pan seared quick so the outside gets browned, then finished in the oven. I first came up with this sauce when I was making steak tacos on the grill the summer. We had a tasty photo leftover from that–in case your wondering where the grill marks on the roasted steak came from!
Slice up that steak, set it out on a table along with the supporting cast, and you are ready for a make your own Awesome Avocado Steak Tacos party! We served this with a Rioja; a Malbec or Zinfandel could also work nicely.

Awesome Avocado Steak Tacos
This steak taco recipe is great for entertaining! A make your own taco bar featuring flavorful beef and awesome avocado chimichurri sauce is sure to please.

Ingredients
- AWESOME AVOCADO CHIMICHURRI SAUCE
- 6 cloves garlic, minced
- 1 scallion, minced
- ¾ cup extra virgin olive oil
- 1 tbsp Champagne vinegar (white wine vinegar is OK)
- 1 ½ tsp cumin
- pinch red pepper flakes
- 1 tsp salt
- ½ tsp minced jalapeno pepper
- ¼ cup chopped parsley
- 2 avocados, diced close to serving time
- 1 tbsp lime juice
- OTHER STEAK TACO INGREDIENTS
- 1 ½ lbs flat iron steak (1 large or 2 medium)
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1 tbsp olive oil
- 1 ½ sweet onions, sliced thin
- 2 different colored bell peppers, coarsely chopped
- 2 packs soft taco shells
- sour cream
- lettuce or other salad greens
- refried beans
Instructions
- Start making the Awesome Avocado Sauce by combining in a bowl the minced garlic, scallion, olive oil, vinegar, cumin, red pepper flakes, salt and jalapeno. Set aside to finish close to serving time.
- Make the steak rub by combining the cumin, garlic powder and salt in a bowl. Preheat oven to 400.
- Pat the steak dry, then sprinkle half the rub over one side of the steak, then gently rub it in. Turn the steak over, and repeat with the remaining half of the steak. Set aside for a good 15 minutes at room temperature to let the flavors absorb as you prepare the onion/pepper mixture.
- Heat the tablespoon of olive oil in a large skillet on medium heat. Stir in the onions and bell peppers. Cook about 10 minutes until they are softened and start to brown, stir occasionally. Lower the heat, and keep warm as you cook the steak.
- Heat an oven-proof skillet on medium high, lightly coated with cooking oil. When the skillet is good and hot, add the steak, and sear for one minute, then flip to sear the other side for another minute.
- Move the skillet with steak to the oven to finish the steak. Check for doneness after 10 minutes of roasting, keeping in mind this is a lean cut that cooks quickly. I wound up cooking mine for 12 minutes for medium rare.
- When the steak is done to your liking, remove from oven and place the steak on a platter to rest briefly.
- As the steak rests, finish the avocado sauce by dicing the avocado and adding it to the sauce along with the parsley and lime juice. Stir gently to combine the flavors. Set the finished sauce by the steak platter.
- Thinly slice the steak so that it is ready to serve.
- Set the taco shells, beans, onions and sour cream alongside the steak and sauce and invite people to build their own Awesome Avocado Steak Tacos! Gather folks around, and make the first one to show them how it’s done. They can do it as they like, but the steak and avocado sauce should take center stage!
