Today’s Guest

Elizabeth Almeida has been passionate about food, farming, and community throughout her life. Growing up on a multi-generation cattle farm in Ohio, she learned the value of growing, preserving, and preparing food. She was active in 4-H and FFA, winning numerous awards in livestock and cooking.
Elizabeth’s early experiences working for a caterer and in a food science research lab helped her develop a foundation of skills for the food business. The exacting scientific practices learned at the lab are ones that she employs today when optimizing her mushroom growing techniques.
After college, Elizabeth spent a year volunteering in Appalachia, where she witnessed deep-rooted justice issues, including food insecurity, environmental degradation, and economic hardship. Committed to making a difference, she carries these values into her work at Fat Moon, producing nutritious food, recycling farm waste into compost, and creating jobs in her community. She has also served her town in various leadership roles, including on the Westford Agricultural Commission and Select Board, where she was Chair from 2019 to 2020.
