I headed to Hannaford Supermarket in Waltham, MA, to pick up our Hatfield® Ham. In the butcher section toward the back of the store, they have a good range of Hatfield® products to choose from.

Hatfield® Ham for Easter Brunch and Dinner

We started getting into Easter mode this weekend by preparing a Easter style dinner featuring a 3 lb Classic Hatfield Ham, served along with some mashed potatoes and green beans.

Slice of Hatfield Ham plated with potatoes and green beans.

And another time we had Hatfield Ham in the mix, we served it along with this delicious Broccoli Cheddar Casserole.

I was aiming to have leftovers to make the Hatfield Ham Pasta recipe the next day; otherwise I probably would have selected the 2 lb. Classic Hatfield Ham. The range of products available from Hatfield® is another reason their products are great options around the Easter holiday. They had a lot to choose from at our nearby Hannaford Supermarket! You can find a list of stores carrying Hatfield products after the recipe.

variety of Hatfield Ham products.

Keep Hatfield® in mind for your Easter Brunch, too! Their phrase “The Best Easter Brunches Start With Hatfield!” remind us that an Easter Brunch menu can be created around Hatfield® Ham. You could dice some ham to make a wonderful ham and cheese omelette, or use the Hatfield ¼ Pre-Sliced Ham slices in a ham, egg and cheese sandwich. Hatfield® also has excellent bacon and sausage products perfect for your Easter Brunch needs.

  • Yield: 6 servings 1x
  • Category: Main
  • Method: stove top
  • Cuisine: American

Ingredients

Scale
  • 1 onion, thinly sliced
  • 1 tbsp butter
  • 1 cup green peas — defrosted if using frozen
  • 1 tbsp extra virgin olive oil
  • 3 tbsp chicken broth or water
  • 2 cups leftover Hatfield Ham, cut into bite sized pieces
  • ½ tsp dried tarragon
  • ¼ cup Parmesan cheese
  • ¼ heavy cream
  • 1 lb ziti or other short pasta shape

Instructions

  1. Begin heating water in a large pot for the pasta.
  2. Melt the butter in a large skillet on medium low heat. Add the onions, and let cook for 5 minutes without moving, then stir once. Cook another 5 minutes until the onion begins to caramelize.
  3. Add the olive oil along with the peas and chicken broth. Stir to combine with the onions. Cover and cook another 5 minutes.
  4. Start cooking the pasta according to package instructions.
  5. After the peas have cooked for 5 minutes, stir in the Hatfield Ham along with the tarragon. Cover and cook another 5 minutes or so, as the pasta finishes cooking.
  6. When the pasta is cooked to your liking, reserve ¼ cup of the cooking water. Drain the pasta and toss immediately the ham and peas mixture. Stir in the cheese followed by the cream. Add half of the reserved cooking water, and a bit more if it looks like it needs more liquid. Plate the pasta and enjoy!

Notes

  • Hatfield® Hams are always fully cooked so there’s no need to worry if the ham has been cooked enough. In this recipe, you are simply try to heat up the ham and have that delicious ham flavors mesh with the other ingredients.
  • You could use more or less ham depending on what you actually have leftover. I would say you would want at least 1 ½ cups of ham for this amount of pasta.
  • If you have leftover peas already cooked, add them at the same time as the ham as they have already been cooked.
