Simple Maple Vinaigrette

Simple Maple Vinaigrette recipe, great for kale, cabbage and other veggies.

Why buy dressings from the store when you came make them so easily from scratch? This Simple Maple Vinaigrette takes about 5 minutes to whip together, and adds great flavor to your salad or other vegetables.

This maple vinaigrette has become one of my main go-to dressings. I most recently featured it here in the Baby Kale Salad with Maple Vinaigrette. I also use it in my Grilled Beets & Sautéed Chard recipe found in the Collards & Kale Cookbook. I figured it was worth posting here as a stand-alone recipe, as I figure I’ll be pointing toward it in other recipes down the road, too.

The sweetness in the dressing is a nice contrast to the bitterness in greens like kale and arugula. It also is a great way to dress up cabbage. How many times have you used half a head of cabbage and wondered what to do with the rest? Chop up extra cabbage in thin slices, combine it with some of this maple vinaigrette, and you’ve got a nice little side dish with crunchy sweetness.

Simple Maple Vinaigrette

This Simple Maple Vinaigrette lends a touch of sweetness to salads and other vegetables. Once you try it, you’ll be featuring it regularly!

Ingredients

Scale
  • 2 tbsp extra virgin olive oil
  • 2 tbsp maple syrup
  • 1 tsp soy sauce
  • 1 tsp mustard
  • 1 tsp apple cider vinegar
  • pepper to taste

Instructions

  1. Combine the syrup, olive oil, soy sauce and vinegar in bowl.
  2. Whisk in the mustard. Add salt and pepper to taste. Set aside to toss with your salad or other vegetables.
