What we made – final 2024 CSA

a variety of vegetables from a CSA share, including squash, potatoes, cabbage and carrots.

Here’s what we made with the final CSA pickup of 2024!

  • Cabbage – we used it to make our Ground Pork and Cabbage Stir-Fry. And had some left over to add to a few salads.
  • Beets – used for another batch of our Roasted Beet Pesto!
  • Carrots and potatoes – were put to use when we made some Porcini Mushroom Beef Stew, which we paired with an excellent Barbera that we wrote about recently.
  • Kale – some of the kale got added to the pork and cabbage stir-fry, but we had enough to make a batch of kale pesto. Yes, pesto is one of my favorite ways to use a variety of veggies!

That kabocha squash is still waiting to get used – any ideas?

You can had back to Episode 31 to see what we were talking about for the final CSA veggies of the 2023 season.
